This was very tasty and somewhat filling as a late night snack, or any time of day.
Slice up the vegetables (pepper, tomato, avocado) into pinky-finger sized slices. Take the pita bred and spread the hummus out on it, then sprinkle the cheese on and microwave for 30 sec until the cheese begins to melt. Spread spinach leaves out over the cheese and hummus. Spread a bit of mayonnaise over the spinach leaves, then lay out the sliced vegetables to fill the pita. Fold in half, wrap with paper towel, eat and enjoy!
